I was sick all weekend, so nothing got prepped as I did nothing but nurse a baby and sleep. Luckily, a well stocked kitchen means we can always throw something simple and healthy together.
This week’s breakfast
Avocado toast (on Glutenfree Canyon Bread with trader Joe’s “everything but the bagel” seasoning) and grapefruit
Smash a hardboiled egg with the avocado for some added protein.
As we were driving home from visiting family yesterday, my daughter and I were brainstorming on how much chocolate peppermint everything we should buy before the aisles switch away from Christmas yummies and move onto Valentine’s Day. So imagine my delight when we pulled in the driveway and there was a package waiting on our doorstep from Goodie Girl Cookies. These sent us a Christmas present for being such loyal customers. HOW AWESOME IS THAT!?! These just so happen to be my daughter’s absolute favorite cookie. Gluten free Mint Slims (imagine if the girl scouts of america got their act together and made gluten free thin mints. If you haven’t ever tried these, get your booty over to the nearest Publix or Walmart and grab yourself a box. You won’t regret it.
Now, if you’re goodie girl-less but surrounded by Trader Joes than I can not encourage you to run fast enough and grab all the boxes of their peppermint Joe Joes (gluten free peppermint oreo style cookies).
I found, being gluten free, that both of these cookies miss the crunch of their gluten containing counterparts, so go ahead and toss them in the freezer. Something magical happens and these cookies become even more magnificient. Or you could do like my son does and crush them up and sprinkle on top of your ice cream sundae.
