Vegetable Fried Rice

In addition to being  full of vegetables, this dish is one of my favorites because it can be made from leftovers and it cooks up in about 20 minutes.

  • rice
  • riced cauliflower
  • vegetables of your choicing (peppers, onions, mushrooms, carrots, squash, zucchini, broccoli, green onions, etc)
  • soy sauce (be sure its gluten free)
  • 2 eggs

Gather assortment of veggies of your choice (I used bell peppers, broccoli, mushrooms, squash, and green onion). Chop and salute in EVOO for about 15 minutes.

Scramble egg in “rice valley”

Make a valley in the middle, scramble 1-2 eggs. Stir everything together while splashing in some soy sauce. When I feel like adding meat, I sometimes sauce the veggies with bacon for added flavor.

Easy dinner

Eating healthy doesn’t  have to be complicated. Here are some simple ideas for your weekend to get you started on a healthy week, because I love keeping it simple, full of color, and inexpensive. I love serving up big plates with a variety so everyone finds something they love and there’s no hate towards healthy eating. Beautiful, flavorful, and meats your 21 day fix meal plan.

Sausage & Pasta

A great dinner doesn’t always have to be fancy. Since having kids I’ve found some of our best meals are the ones that take very little prep. We were out of town all weekend and the kitchen was looking a little sparse. 20 minutes after getting home, dinner was ready and on the table.FEB_4043

  • Slice and saute squash in olive oil (about 15mins)
  • While squash is sauteing, boil gluten free pasta
  • Cut up (precooked) sausage and toss in with the squash and allow to heat through.
  • Drain noodles and mix all together with salt, pepper, and oregano.FEB_4045
