Goodie Girl Cookies

Those little cookies were worth the search. We tossed them in the freezer, closed our eyes, and enjoyed them as we enjoyed Thin Mints in our glutenness days. We started taste testing the others today. I won’t lie, our expectations were high and I was ready to be disappointed. Afterall, not every cookie is as good as a thin mint. FEB_4084

First up: The bite size midnight brownies are just the right amount of sweetness with chocolate chips dotted through each bite. My daughter and I loved them, but my 4year old Vanilla ice cream loving son said they were “too sugary”.

Sausage & Pasta

A great dinner doesn’t always have to be fancy. Since having kids I’ve found some of our best meals are the ones that take very little prep. We were out of town all weekend and the kitchen was looking a little sparse. 20 minutes after getting home, dinner was ready and on the table.FEB_4043

  • Slice and saute squash in olive oil (about 15mins)
  • While squash is sauteing, boil gluten free pasta
  • Cut up (precooked) sausage and toss in with the squash and allow to heat through.
  • Drain noodles and mix all together with salt, pepper, and oregano.FEB_4045

Valentine’s Day Breakfast

valentines day m&msMy three year old is currently OBSESSED with m&ms, so I had to splurge and spoil him with m&m banana pancakes for Valentine’s day. BEST gluten free flour EVER made

I have had a gluten free allergy for a decade. In the early years, I was guilty of “splurging” and treating myself to a small bit of gluten and an evening in pain.

When I became pregnant with my daughter, I knew I couldn’t allow my love for food to punish my body. It was while pregnant (and always hungry) that I discovered my absolute favorite gluten free product.

I am a baker, an eater, a lover of food. I HAD to find a replacement for gluten and PAMELA’S GLUTEN FREE FLOUR filled that need. The Mess My Kids Made Me

“Having kids is like having to clean up after a party you didn’t get invited to.”

“Buuuut moooooom….its not fair I have to ALWAYS do ALLL the cleaning.” my  year old whines when I ask her to pick up the 6 pairs of shoes SHE left in the living room today. It was a breaking point somewhere between stumbling over bikes, stepping on deathly sharp legos, and find myself picking up the 1,000th sock of the day that I finally felt inspired to read the book, my friend recommended. A book about cleaning, as if I have time or the interest in that, but a chapter in I felt a shift. Something was stirring inside of me and I knew this book was the answer to my prayers.
