Goodie Girl Cookies was generous enough to send us a variety pack of their cookies after we went on an epic search through Orlando to find their slim mints. Those little cookies were worth the search. We tossed them in the freezer, closed our eyes, and enjoyed them as we enjoyed Thin Mints in our glutenness days. We started taste testing the others today. I won’t lie, our expectations were high and I was ready to be disappointed. Afterall, not every cookie is as good as a thin mint.
First up: The bite size midnight brownies are just the right amount of sweetness with chocolate chips dotted through each bite. My daughter and I loved them, but my 4year old Vanilla ice cream loving son said they were “too sugary”.

A great dinner doesn’t always have to be fancy. Since having kids I’ve found some of our best meals are the ones that take very little prep. We were out of town all weekend and the kitchen was looking a little sparse. 20 minutes after getting home, dinner was ready and on the table.
- Slice and saute squash in olive oil (about 15mins)
- While squash is sauteing, boil gluten free pasta
- Cut up (precooked) sausage and toss in with the squash and allow to heat through.
- Drain noodles and mix all together with salt, pepper, and oregano.

I have had a gluten free allergy for a decade. In the early years, I was guilty of “splurging” and treating myself to a small bit of gluten and an evening in pain.
When I became pregnant with my daughter, I knew I couldn’t allow my love for food to punish my body. It was while pregnant (and always hungry) that I discovered my absolute favorite gluten free product.
